Spinach scrambled eggs
I was in such a rush to make supper the other night, so I made this up on the spot. It came out pretty well and the kids ate it too.
- Boil some frozen spinach for a few minutes until it's cooked. Drain.
- While the spinach is cooking, beat some eggs together with milk, onion powder, and pepper.
- Scramble the egg mixture. Even better, make an omelet. (I've never quite gotten the omelet technique right. If you can do it, more power to you!)
- When the eggs are just about done, mix in the spinach and, optionally, some shredded mozzarella.
- Serve to hungry family. :)
